Recipes: Spinach Quesadilla

Spinach Quesadilla

 4 flour tortillas

1 10oz pkg frozen chopped spinach, drained
1 egg
1 cup cottage cheese
¼ cup grated parmesan cheese
¼ cup crumbled feta cheese
1 cup mozzarella cheese
ground pepper to taste 

Mix spinach, egg, cottage cheese, parmesan, feta and pepper together in a bowl. Divide equally among 4 tortillas and spread mixture on half of each. Sprinkle with mozzarella and fold over. Place in non stick fry pan and cook covered on med heat. Turn when golden brown and continue until other side is also golden. Remove from heat, cut into four wedges and serve. Makes a nice lunch or appetizer. Try adding a bit of cooked chicken or thinly sliced mushrooms. Delicious!
