Recipes: Low Fat Bran Muffins

Low Fat Bran Muffins
1½ cups raw bran
1 cup whole wheat flour
½ cup ground flax seed
1 tsp baking soda
¼ tsp salt
1½ cups buttermilk or
regular milk and
1½ tbsp vinegar
3 tbsp molasses
1 egg
2 tbsp oil
½ cup raisins
Measure dry ingredients into a bowl, in a separate bowl beat together liquid ingredients. Add liquids to dry as well as raisins. Mix together. Grease or line muffin tins with baking cups. (Because these are low fat they have a tendency to stick) Bake at 375° for 12-14 minutes. Guaranteed to keep you regular!
